    Abstract
    The purposes of this operation research were to develop the packages of Thai herbal cookies and to conduct the technology transfer of Thai herbal cookies’ packages for the community. The research process which involves with packages’ pattern analysis, monitoring and operating packages’ design, making packages’ sample, evaluating packages’ sample, finishing the package, target group setting, creating the research methodology, investigating need analysis, training course setting, conducting the training course, and data analysis. The results of the study were 11 styles of herbal cookies’packages. The mean of the achievement in satisfaction evaluation was at 3.92. Need analysis for cookies courses are found in lemon grass cookies, kaffir lime leaves cookies, ginger cookies, mixed herbal flavour and coriander cookies respectively. There was significantly difference between pre-test and post-test scores of the experiment at 0.05 level of significance. The mean of the groups๛ achievement evaluation was at 3.50-4.49. Program and training process evaluation qualified as the mean of the products and their packages was 4.28 and 4.34 respectively.
